Quick Black Bean Soup
Canned beans are a great start for a pantry meal. The following is a quick version of black bean soup that tastes like it took a lot longer to make. So far my favorite salsa is Trader Joe’s Roasted Garlic salsa which has a great garlicky flavor and is low in sodium. Muir Glen fire roasted tomatoes with chilis is also good alternative. You can garnish this with avocado, cilantro and sour cream to dress it up. Great served with cornbread.
Quick Black Bean Soup
2 cans black beans, rinsed and drained
1 cup salsa or fire-roasted tomatoes w/ chilis
2 cups low sodium chicken broth
1 garlic clove, minced
1 teaspoon olive oil
1 T red wine vinegar
1/2 t each cumin, chili powder
tobasco to taste
In a blender, lightly puree about half of the drained beans, the salsa and chicken broth. In a saucepan, saute the garlic clove in olive oil for about 30 seconds. Add the remaining ingredients and bring to a boil. Simmer for about 5 minutes.
