Menu Plan for Week of Feb 8, 2009
Last week’s international menu was fun (we didn’t have the mapo tofu which is moved to this week). This time we are back to some of the recurring meals. A lot of people seemed interested in quick pantry recipes, so I wrote a separate post on frugal emergency pantry meals and put the tuna pasta sauce on the menu for Friday. This menu should be entirely gluten free, including the Valentine’s flourless chocolate cake.
Breakfasts: Smoothies, boiled eggs, cereal, fruit
Lunches: Leftovers, rice cakes and peanut butter
Dinners:
Sunday: Pinto beans, and collard green soup (made with tomatoes and sweet potatoes), ambrosia
Monday: Mapo Tofu, brown rice, steamed bok choy, fruit salad
Tuesday: Indonesian spicy rice w/ eggs, stir fried veggies, fruit salad
Wednesday: Baked beans and roasted brussels sprouts (a strange combination we like)
Thursday: out
Friday: Simple tuna pasta (made w/ brown rice pasta), green beans, salad
Saturday: Valentines special dinner: steak, mushrooms, garlic spinach, salad, flourless chocolate cakes
