Simple Tuna Pasta Sauce

This is a good emergency pantry meal when you forget to go to the grocery store.  The texture and taste of tuna in olive oil works well in this dish, but chunk light tuna in water is okay.  Or, you can try canned boneless, skinless salmon.  If you have more time and ingredients, you can saute a diced onion and slices of zucchini as well.

Tuna Pasta Sauce

1 6 1/2 oz. can tuna, drained and flaked
1 clove of garlic, minced
1 bottle (about 16 oz.) or can spaghetti sauce
Crushed red pepper

Drain the tuna and place a small spoon of the olive oil into skillet on medium-high.  Saute the minced garlic for about 15 seconds and add the tuna, then the spaghetti sauce and crushed red pepper to taste.  Let simmer for about 5 minutes.

Serve over cooked drained pasta (I use penne) and garnish with fresh basil if you have it.

Tried it, loved it! I’ve made this several times now, per my kids’ request. We like 1/2 chopped olives in it, green or black depending on what I have. The leftovers are even good cold. Thanks for the great recipe.
