Menu Plan for Week of Feb 1, 2009

For this week’s menu plan, I decided to have some fun and have a meal from a different country each day.  Fortunately, I have simplified most of the recipes to use ingredients that can be found at the regular grocery store.  The menu is gluten free, and I will be using pineapple in the ambrosia, which is a fancy way of saying pineapple, orange, and coconut stirred together.

Breakfasts: Fruit, smoothies, eggs
Lunches: Leftovers, vegetable sushi

Sunday: (Spanish) Appetizers (tapas) , Gypsy soup, salad

Monday: (Indian) Chickpeas and beef, Indian vegetables, rice, coleslaw

Tuesday: (Chinese) MaPo Tofu, stir fry veggies, brown rice, ambrosia

Wednesday: (Thai) Shrimp red curry, brown rice, broccoli, salad

Thursday: out

Friday: (Mexican) Mock Chipotle bowls with rice, black beans, leftover beef, toppings, fruit

Saturday:
(American South) Pinto Beans and sausage, greens

Hi Tiffany,

I cheated and served some non-authentic Spanish appetizers like hummus and guacamole with vegetables and chips for dip. In addition, I diagonally sliced and fried up some hot sausages (like hotlinks, or spicy kielbasa).

If I had a lot of guests over, I would probably make a Spanish tortilla (potato omelet) with tomato sauce to dip in, shrimp in garlic and olive oil, and an apple, cheese, and marcona almond toss.
