Easy Migas
I’ve been trying to come up with more ideas for breakfast that aren’t based on sweet baked goods. One of hubby’s favorite cuisines is Mexican food, so I often make a simplified version of Migas. This version is very fast and is great to use up leftover tortillas or stale chips. For additional non-sugary breakfast ideas, see my post on having veggies for breakfast.
Easy Migas
2 servings
4 eggs, beaten
¼ to ½ cup salsa, I use Trader Joes which is spicy
½ onion, diced
½ bell pepper, diced
1 clove garlic
½ cup crushed leftover chips or tortillas, torn to pieces
Small amount of olive oil
Beat 4 eggs with salsa. In a pan over medium high heat, saute onion, bell pepper, and garlic in the oil until softened. Stir in egg mixture, stir for about 1 minute. Add chips or tortilla pieces. Stir to combine all. Cook until eggs are just set. Let sit for 2 minutes to allow tortilla pieces to soften.
For weekend brunch, I like to serve this with refried black beans and more salsa on the side; followed by a fruit salad.
