Menu Plan for Week of Jan 25, 2009

Given that the weather has turned colder, I bought an organic chicken to roast today.  I’ll be using the chicken through the week to make soup, stir fry and chili.

Breakfasts: We still have half of the baked oatmeal from last week, boiled eggs,  kefir, smoothies

Lunches: Leftovers, rice cakes and peanut butter, apples

Dinners:
Sunday: Roast Chicken with garlic, roasted carrots, ratatouille

Monday: Mexican chicken soup w/ green beans and zucchini, brown rice, fruit

Tuesday: Chicken and vegetable stirfry, brown rice, salad

Wednesday: Spinach and white beans, sweet potatoes, boca burgers

Thursday: out

Friday:
White chicken chili, sweet potatoes, coleslaw

Saturday: Leftover buffet
