Menu Plan for week of Jan 18, 2009
I notice that I tend to stay on certain themes each week. For example, this week we are having a lot of rice dishes and a number of things made in the crockpot. As long as the eaters are satisfied, I think that’s fine. I’m excited to try Stephanie’s sausage and rice casserole in the crockpot. I’ve had it bookmarked for months.
Breakfast: Migas, healthy baked oatmeal, yogurt, fruit
Lunches: Leftovers, veggie sushi
Dinners:
Sunday: Autumn rice casserole in the crockpot, brussels sprouts
Monday: Indonesian spicy rice w/ eggs, stir fried veggies, fruit
Tuesday: Salmon cakes, corn, peppers and zucchini; orange coleslaw
Wednesday: Lentil stew from freezer, green salad, fruit salad
Thursday: Out
Friday: Crockpot red beans and rice w/ turkey sausage, collard greens
Saturday: leftover redbeans and rice, salad

I like the sound of that rice. I should keep that in mind next time I have some leftover tofu.
