Menu Plan for week of Jan 11, 2009
I’m continuing to clean out the freezer and pantry and am buying only fresh produce (this may take several weeks), I’ve defrosted locally raised organic grass-fed ground beef from the freezer. I hope it’s tasty. This menu should be entirely gluten-free.
Breakfasts: Migas, peanut butter granola, fruit, smoothies
Lunches: Leftovers, tuna salad, veggie sticks and hummus
Dinners:
Sunday: Beef and chickpeas, broccoli, salad, brown rice
Monday: Tuna spaghetti made with brown rice pasta, green beans, salad
Tuesday: Crockpot ground beef and vegetable stew, apple ginger coleslaw
Wednesday: Leftover stew, green salad, fruit salad
Thursday: Out
Friday: Black beans and rice, collard greens, fruit salad
Saturday: Lentils with tomatoes and sausages from freezer, salad, ambrosia

The tuna spaghetti sounds like a great healthy alternative to the traditional spaghetti.

We received organic grass fed beed through our CSA last year & I could really tell a difference in the flavor. It wasn’t a bad difference, but it was definitely there.
Good luck with your clean out! I just did a pantry clean out & refused to buy anything canned or boxed until it was darned near empty. It was great!
How do you make migas and the lentil, tomato, sausage dish?
Hi frugalsophisticate, I have been slow at putting up the full recipes, but I think migas is next on the list. Migas are basically scrambled eggs with salsa and crumbled tortillas or tortilla chips added. For the Lentils, I fix it in a crockpot with onions garlic, hamhock, a can of diced tomatoes and carrots. Normally, I fix beans in the crockpot without tomatoes but I think the lentils are much better with. Recipes to come.
