Menu Plan for the Week of Jan 4, 2009
After finding it difficult to put anything in the freezer because I have so many servings of leftovers there, I decided that this would be “clean out the freezer (and pantry)” week. The only thing I’m buying is fresh produce. The menu is mostly gluten-free.
Breakfasts: Healthy baked oatmeal, fruit, yogurt, smoothies
Lunches: Leftovers, miso soup w/ rice and veggies
Dinners:
Sunday: Black eyed pea, collard green, and sweet potato stew (using leftover New Year’s peas); fruit salad
Monday: Roasted Brussels sprouts, baked beans, green salad, fruit
Tuesday: Indonesian spicy rice w/ egg, Chinese veggies, fruit
Wednesday: Mock Chipotle bowls w/ black beans, rice, zucchini, spicy chicken, avocado, and tomatoes
Thursday: Salmon and potato cakes, braised red cabbage, sweet potatoes, sliced pears
Friday: Lentil stew w/ tomatoes, apple-ginger coleslaw
Saturday: Spinach and white beans, Riblets (these are not gluten-free), ambrosia
