Healthy Baked Oatmeal

We eat oats frequently.  Along with brown rice, they comprise most of the whole grains that we consume (I cook gluten free).  So, I was intrigued when I stumbled across this recipe.  It appears to be of Amish origin, and quite a different experience in eating oatmeal compared to the traditional preparation.  The texture is particularly interesting, and this batch conveniently makes a large amount that can be reheated in the microwave.  When I see a recipe, one of the first things that I try to do is to see if the sugar (and maybe oil) can be reduced.  The first version of the recipe I saw had 1 cup of sugar and 1/2 cup of butter.  I tried it without the sugar and with applesauce instead of oil.  If the following is too austere for you, you can serve it warmed topped with a pat of butter and a drizzle of maple syrup at the table.

Healthy Baked Oatmeal
8-10 servings

3 cups rolled oats
Pinch of salt
1 teaspoon baking powder
2 Tablespoons ground flax, optional
1 T cinnamon
1 T pumpkin pie spice
1 cup milk, low fat dairy, rice milk or soymilk
2 eggs
1 granny smith apple, peeled, cored and diced
½ cup blueberries, frozen or fresh
½ cup raisins (or dried cranberries)
½ cup applesauce
½ cup chopped walnuts, lightly toasted
1 T maple syrup (optional, for taste)
1 T melted butter (optional, for taste)

Preheat oven to 350 degrees. Mix dry ingredients (first 4) in bowl with spices. Add all other ingredients and mix to combine. Pour mixture into greased 9X9 pan and bake for about 40 minutes until knife inserted in center comes out clean. Or pour contents into greased crockpot (3 ½ to 4 quart) and cook for 4-6 hours on low until edges are lightly brown and knife inserted in center comes out clean. When slightly cool, cut into squares. Serve with warm milk. Store leftovers in the refrigerator, warming individual portions in the microwave.

My family loves oatmeal, so I will definitely be trying this recipe. I also love that you can cook it in a crockpot. I have never made oatmeal from scratch. I always get the packets where you add milk and stick it in the microwave, so my family is really going to love this recipe.

Hi Geri, I like oatmeal a lot as well. This recipe is quite flexible with seasonal fruits and different nuts. My last version was blueberry and pecan, yum! Thanks for visiting.

i don’t like oatmeal but when i try your version oatmeal i never thought that Im gonna like it but when i taste it, oatmeal are not bad at all for me. Thanks for your recipe version of oatmeal. Im looking forward to get more recipe version of oatmeal
